Mexican Vanilla: A Flavor with History and Heart

When we talk about ingredients that represent us as a country, Mexican vanilla holds a special place. Not only for its sweet flavor and delightful aroma, but also for the history and tradition behind it. What many don’t know is that vanilla is native to Mexico, specifically to Papantla, Veracruz, a land where it is still cultivated with the same care and respect as it was centuries ago.

The first to work with vanilla were the Totonacs, an Indigenous people who considered it a sacred plant. Its original name in Nahuatl is… tlilxóchitlwhich means “black flower,” referring to the dark color the pods take on when dried. It was an ingredient used in rituals, as an offering, and in special beverages—especially those made with cacao.

The history of Mexican vanilla is so unique that, for a long time, it could only be cultivated here. The reason? The vanilla flower needs a native bee the Melipona bee— to be pollinated, and that bee existed only in our land. That’s why, for centuries, Mexican vanilla was a rare gem, difficult to obtain and highly valued around the world.

Over time, other countries began producing vanilla, but they had to learn to hand-pollinate the flowers. Even so, Mexican vanilla remains extraordinary for its floral, smooth, and deep flavor profile. It’s no surprise that those who taste it for the first time immediately notice the difference.
