Ingredients:
- 100g sugar.
- 100g flour.
- 1 teaspoon vanilla extract.
- 5 eggs.
- ½ cup water.
- 100g chocolate.
- 250g butter at room temperature.
- 3 tablespoons instant coffee.
- 3 egg yolks.
- 100g powdered sugar.
- 100g red fruit variety.
- Mint leaves.
Preparation:
BREAD
- First, we will start with the preparation of the bread. Take 4 of your 5 eggs and separate the whites from the yolks. Mix them with the vanilla extract until evenly incorporated.
- Add the sugar to your mixture and beat for about 3 minutes.
- To your mixture, add the last (whole) egg and begin to gradually add the flour. Continue beating until you have a smooth, lump-free mixture.
- In a separate bowl, beat your 4 egg whites until you get a uniform foam. Once ready, carefully add it to your original mixture.
- Prepare a buttered rectangular baking sheet and spread your mixture. Try to eliminate the air and spread it evenly.
- Bake your bread at 200 degrees Celsius for 15 minutes.
PASTRY CREAM.
- Place a pot with water and sugar over low heat. Stir this mixture until you obtain a caramel-colored syrup.
- Pour your syrup into a bowl and add the eggs. Stir slowly until well blended.
- Add the butter at room temperature and stir until you get a smooth cream.
- Take your chocolate and melt it in the microwave. Do this in 30 second cycles to avoid burning the chocolate.
- Once melted, add it to one part of your cream and stir until well integrated.
- To the other part of your cream, add the soluble coffee diluted in water and stir until well integrated.
- your creams for 15 to 20 minutes in the freezer to obtain a thick consistency.
PRESENTATION AND PLATING.
- Take your bread out of the oven and let it cool for a few minutes. Once ready to handle, unmold and place it on your work surface.
- With the help of a spatula, place your coffee cream on the bread. Spread evenly, trying to use all the mixture.
- Carefully roll your bread from the short end. The result is a log shape.
- Start lining your log with the chocolate cream. Try to make sure that the covering is uniform and that there are no uncovered holes in the cake.
- With the help of a fork, gently fluff your loaf to give it a log-like appearance.
- Carefully transfer your yule log to the plating tray.
- Add your dried fruit and decorate to taste. Then sprinkle with powdered sugar.
- Let your yule log cool for 1 hour and ready to enjoy.
Serve your Yule Log with whatever you like!
