Ingredients. 

• 1 egg.  
• 1 tbsp. Natural Vanilla.  
• 1 tbsp. baking powder.  
• Yellow lemon zest.  
• 150 g sugar.  
• 150 g unsalted butter.  
• 250 g flour. 

Process.  

1. Mix the sugar and butter in a bowl at room temperature until you obtain a homogeneous mixture.  
2. Add the egg and the tablespoon of vanilla to your mixture and stir until the ingredients are fully incorporated.  
3. To our mixture, add the lemon zest.  
4. Gradually add the flour and baking powder to the mixture and stir until you have a dough.  
5. Let your dough rest in the refrigerator for 15 to 20 minutes.  
6. Let’s start baking! Preheat your oven to 180 degrees Celsius.  
7. Take your dough out of the refrigerator, start making dough balls with your hands and place them on your baking sheet. Make as many as you can and measure their size as you go.  
8. With the help of a flat plate, flatten your balls to give them a circular shape.  
9. Bake your cookies in the oven for 15 minutes.  
10. Once the cookies are ready, let them rest for a few minutes and be ready to enjoy.
