Mexican Vanilla Cake with Homemade Glaze: A Timeless Classic

Ingredients for the cake
- 1 cup (225 g) unsalted butter, at room temperature
- 1 ½ cups sugar
- 4 eggs
- 2 ½ cups all-purpose flour
- 1 tablespoon baking powder
- ½ teaspoon salt
- 1 cup whole milk
- 2 teaspoons Mexican vanilla extract (or seeds from 1 vanilla bean)
Ingredients for the glaze:
- 1 ½ cups powdered sugar
- 2–3 tablespoons milk
- ½ teaspoon Mexican vanilla extract
- A pinch of salt
- (Optional) lemon or orange zest for decoration
Instructions:
- Preheat the oven to 180°C (350°F). Grease and flour a cake pan (round or rectangular, whichever you prefer).
- In a large bowl, beat the butter and sugar together until creamy and light.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the Mexican vanilla — this is when the true aroma of home begins to bloom.
- In a separate bowl, combine the flour, baking powder, and salt. . Gradually add this mixture to the batter, alternating with the milk, beginning and ending with the flour. Mix just until combined.
- Pour the batter into the pan and bake for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean.
- While the cake cools, prepare the glaze: mix the powdered sugar with the milk, vanilla, and a pinch of salt. It should be thick but pourable. Adjust with a few more drops of milk if needed.
Once the cake is cool, pour the glaze over the top and decorate with citrus zest if you want a fresh and colorful touch.
