Mexican Vanilla Cake with Homemade Glaze: A Timeless Classic

Ingredients for the cake

  • 1 cup (225 g) unsalted butter, at room temperature
  • 1 ½ cups sugar
  • 4 eggs
  • 2 ½ cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 cup whole milk
  • 2 teaspoons Mexican vanilla extract (or seeds from 1 vanilla bean)

Ingredients for the glaze:

  • 1 ½ cups powdered sugar
  • 2–3 tablespoons milk
  • ½ teaspoon Mexican vanilla extract
  • A pinch of salt
  • (Optional) lemon or orange zest for decoration

Instructions:

  1. Preheat the oven to 180°C (350°F). Grease and flour a cake pan (round or rectangular, whichever you prefer).
  2. In a large bowl, beat the butter and sugar together until creamy and light.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the Mexican vanilla — this is when the true aroma of home begins to bloom.
  5. In a separate bowl, combine the flour, baking powder, and salt. . Gradually add this mixture to the batter, alternating with the milk, beginning and ending with the flour. Mix just until combined.
  6. Pour the batter into the pan and bake for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean.
  7. While the cake cools, prepare the glaze: mix the powdered sugar with the milk, vanilla, and a pinch of salt. It should be thick but pourable. Adjust with a few more drops of milk if needed.
