Vanilla Cream Scones with Strawberry Jam! How very elegant, not to mention yummy!
Forget everything you thought you knew about vanilla desserts and take a bite at a melt-in- your- mouth vanilla scone that with a creamy topping and a drizzle of strawberry jam, it is sure to impress the most demanding palates.
Directions for preparing Vanilla Cream Scones with Strawberry Jam
Preheat oven to 190°C. Next, line a flat baking tray with baking paper. Sift flour, sugar and a pinch of salt into a large bowl.
Then, combine cream, milk, include add your vanilla extract carefully in a jug to pour it our into the dry ingredients and stir with a flat-bladed knife to combine. Turn onto a lightly floured surface and knead gently until smooth.
After patting the dough out to a 2.5cm-thick round, use a 5cm scone cutter, cut 12 scones from dough. Gently press remaining dough together and repeat. Place scones on prepared tray, allowing a little room for spreading. Bake for 12 to 15 minutes or until golden. Remove from oven. Cover with a clean tea towel and stand scones on tray for 10 minutes.
Make strawberry cream: Stir jam in a bowl until softened slightly. Add cream and half the strawberries. Gently fold through until just combined.
After splitting the scones in half, top the bases with a dollop of strawberry cream, remaining strawberries and scone tops. Dust with icing sugar and serve.
These scones will look spectacular on a plate with nothing but a streak of your strawberry sauce, but you could add fresh fruit or chocolate ganache, too or even pour a bit more of your Mexican Vanilla Gourmet on top of them just for more fun and flavor.
